Conditioning, the achievement, post-fermentation, of a particular beer’s correct character of maturation and carbonation. As such, “conditioning” is a catchall term that may include lagering, relatively warm aging in a tank, refermentation in the bottle, or refermentation in a cask. The word “condition” is often used to describe the level and texture of carbonation, particularly in the UK.
