“Barleywine brewed with Galaxy hops, a starting gravity of 37 Plato, double oak, aged 10 months in Cognac barrels, 5 months in Woodford Reserve Double Oaked barrels.”

Aroma: “Vanilla, toffee, caramel, semisweet chocolate, leather, and tobacco. Spicy phenols. Candied orange peel and fig, burnt maple syrup, and maybe just a bit of wine grape.”

Flavor: “Caramel, toffee, vanilla, maple, bittersweet chocolate. Sweet, but balanced. Boozy and warming, but not harsh. Fairly viscous for the style, full-bodied. Pleasant oak notes of bourbon, sherry, port. Finishes sweet, but not cloying.”

Overall: “A wonderfully complex, full-bodied, sweet, big, and delicious barleywine. Well-balanced and beautifully boozy. An exquisite beer that begs to be savored.”

**Aroma:** “Sherry, dark fruits, roasted pecans, molasses, and caramel malt notes with hints of vanilla and a touch of tobacco/leather, perhaps from the barrel. Strong barrel character, perhaps cognac?” **Flavor:** “Toasted marshmallows, with hints of caramel, toffee, and butterscotch, followed by a complex barrel contribution, with hints of vanilla, tobacco, and licorice, all complemented by apricot, raisin, date, fig, and plum. Strong alcohol backbone: spicy and warming, but very smooth. The lightly bitter aftertaste is like a smooth roasted coffee.” **Overall:** “This beer offers some of the most complex barrel character I have ever had in a beer. With notes of licorice, figs, dates, vanilla, and even tobacco all complementing the rich, full-bodied malt character, this is a truly unique beer to experience. Even the tiniest of sips offers a world of flavor.”

In the mouth, these characters melt into thick caramel, toffee, coconut, toast, dark fruit, and chocolate with a delicious full-bodied sweetness balanced with just the right hops bitterness. A dark spiciness marks the alcoholic warmth, which is aggressive, but never harsh. Between the drying alcohol and the firm touch of hops bitterness, the sweet malt stays within bounds. The aftertaste suggests rum-soaked fruitcake. Yum! One to be sipped and thoroughly enjoyed in front of the fireplace on a snowy night.”
