What the brewers say

Aged in a single Pinot Noir barrel, to which we added dried German woodruff. Topped up for two years before a natural refermentation with local wildflower honey.

What our panel thought

Nose of lemon, wet hay, leather, grapefruit, horseblanket. Citrus flavor, also with pronounced pineapple, on bright, crisp acidity. As initial punch fades, subtle complexities emerge: peach, tangerine, and a light lingering tannic character. Refreshing.

What our editors thought

Bright, creamy lemon-vanilla custard on the nose; a touch of barnyard funk. Quick lemon-acidic flavor hit shocks and subsides, leaving wood, very light Brett, and a delicately balanced but deeply complex flavor.
