Aroma: “Dark roast coffee and roasted malt. Biscuity, toasted rich malt in the background. Spicy alcohol. Mild chocolate.”

Flavor: “Coffee-forward, followed by roast malt and alcohol. Medium hops bitterness complements roast notes. Starts quite sweet and transitions to a moderately intense acrid bitterness that’s emphasized by the medium high carbonation. The alcohol brings out a nice nuttiness and accentuates the cocoa highlights. Pleasant caramel, too.”

Overall: “Well-crafted beer. The balance of coffee and malt is nice. Alcohol warming is pleasant.”

Terrapin Beer Company Cinnamon Roll’d Wake-n-Bake

**Aroma:** “Coffee is forward with the cinnamon in the retronasal. Cinnamon is fairly intense and lingers. Toasted malt in the background. It’s like the person next to you is drinking Mexican hot chocolate and you can mostly just smell the cinnamon. The stout comes through mostly as a mild earthy chocolate.” **Flavor:** “Big dark roast coffee blends with roasted malt. Moderate sweetness quickly fades into a bracing bitterness that lingers. Cinnamon gives a dryness that lingers and adds depth and complexity. A sip puts you in that neighbor’s place, sipping your own Mexican hot chocolate, maybe with a shot of espresso. The spice is nicely balanced. The roasty finish tingles with just a little heat that alludes to the slight alcoholic warmth that creeps in.” **Overall:** “Dark roasted malt and coffee dominate and are backed by a nice toasted malt character. Cinnamon is intense (like holiday cookies) and leads to a finish that lingers. Alcohol warming complements the spicy notes. More depth in the nose would be good, but this has a good balance between the spice and malt in the flavor.”

Sweet vanilla nose rounds out coffee, red-berry esters, and dark-chocolate. In the flavor, roast-malt sharpness tempers mild sweetness, light caramel plays with vanilla and fig-cherry esters. Solidly presented, rich coffee stout. Very mochaccino.

Bear Republic Brewing Company Big Bear Black Stout

**Aroma:** “Big chocolate, light roast, light astringency, light acidic note, light caramel, very light dark fruits. Coffee ice cream with a touch of chocolate/cocoa with hints of nutmeg and a touch of licorice. Alcohol evident.” **Flavor:** “Bittersweet chocolate, like very dark or baker’s chocolate. Good mocha flavor—roast and chocolate malt. Good bitterness with sweet undertones. Aftertaste is fairly mild, like it’s toning itself down. Moderate earthy hops, big mouth filling carbonation. Alcohol is up front and warming, but not harsh.” **Overall:** “Classic imperial stout, leaning toward the roast. Crisp with a fair bit of bitterness at the end. There are supporting notes of caramel, chocolate, and dark fruits that come through keeping the beer from being too simplistic. A nice hefty body and rich chocolate and coffee flavors make this a nice winter beer.”
