Aroma: “Muted malt aroma with what comes across as a slight Pilsner. Low- to-medium hops with spicy and mossy characteristics. Soft floral notes evident at the end. Pineapple, orange, and lemon balance the earthy funk, with a hint of Brett, hay, fresh-cut grass, and a bit of smoky phenols.”
Flavor: “A fantastic mouthfeel and medium but light malt flavor that plays well in the back, with an almost smoky hops flavor. The focus is quite earthy, with hints of moss, hay, and bark. Moderate apple tartness in the middle with coriander, and a nice, spicy finish. The carbonation is light and enhances the beer, leaving a dry freshness.”
Overall: “Overall, a great beer with some fantastic pepper and almost rye-like characteristics. Refreshing and light, with good acidity to cut through some of the pepper and spice. Very light sessionable earthy, funky saison, with a peppery, minty, smoky phenol character. Nice complexity, and it comes together well.”
