What our panel thought
Aroma: “If you’ve got the money, I’ve got the thyme. And this beer has plenty to spare. It smells like taking fresh thyme with some rosemary and grinding it with a mortar and pestle. Very light blueberry and a light malt sweetness with a touch a smoke.”
Flavor: “The first sip isn’t as intense as the aroma. There is a Belgian-like character to this beer with grapes, plums, and blueberries that transitions into a light thyme flavor that grows to moderate by the end of the glass. Heavy body with light carbonation and a touch of alcohol warming and smoke.”
Overall: “There is a nice complexity and the blend between the earthy spice and thyme with fruit sweetness. Some might find it a bit too herbal. A beer to cook with.”
