What the brewers say

“Rustic saison fermented with a blend of saison yeasts and aged in oak foeders for 3 months with our house mixed culture of wild yeast and souring bacteria. Refermented in bottles for an additional 3 months.”

What our panel thought

Aroma: “Orange, tropical, banana, with some light bready malt and some wild notes of clean barn, dry straw. As it warms, you get more peaches and apricots. Slightly sour and lightly tart.”

Flavor: “More citrus and tropical in the flavor. Slight leather. Lightly sour, earthy, fresh. Low hops bitterness.”

Overall: “Refreshing, lightly sour, summer thirst quencher with a wild kick! Very fruit-forward.”

Brasserie Dupont Foret Libre

**Aroma:** “Fruity esters, reminiscent of pear, apple, and candy. High fruity notes (citrus and lemon) dominate. A very doughy, bready aroma full of young bubble-gum yeast esters and a light waft of spicy clove.” **Flavor:** “Pilsner-grainy finish with a stinging hops/CO2 bite. Very crisp and just a touch of doughy wheat sweetness. Tons of fruity esters, with notes of pear, candied apricots, and a nice, subtle white pepper spice phenolic. Finish is nice and dry, which makes it very drink- able. Lemon and some orange citrus notes braced by a bit of Brett character.” **Overall:** “Tasty example of a saison. Could use a touch more dryness, but solid yeast profile, pleasant malt flavors, and exactly what you’d expect from the style—no signs at all that this used a gluten-reducing enzyme. Flavor, mouth- feel, body and appearance all seem unaffected. A textbook saison.”

TRVE Brewing Company Restarter

__Aroma:__ “A dance between tart cherry and sweet peach with a little apricot in the back. The fruit is a bit hidden with a sort of lactic sour milk aroma up front. A bit earthy and wet hay. Some low-level general fruitiness in the background.” __Flavor:__ “Tart citrus flavor that reminds me of Smarties candy, even with a light chalkiness. Chewy body with a medium carbonation. Finishes with a medium tartness that is medium lasting. As it warms, the peach and cherries start to come out. From the funk, it tastes like my grandfather's tack room smelled: straw, dust, sweat, leather. Low overall fruit with intense citric acidity. Very dry.” __Overall:__ “The fruit character is somewhat hidden, but if you let this beer warm up slightly it will expose the peach and cherry flavors. The complexity is enjoyable with the funk, fruitiness, and tartness playing well off one another. A bit more fruit and a bit less acidity would make beer better.”

Wicked Weed Brewing Fille de Ferme

**Aroma:** “Barnyard and sweaty pineapple _Brett_ funk, white grape, orange citrus, and a bit of spicy and floral in the background. Funky and earthy. Light spice in the back end.” **Flavor:** “Sour throughout that builds and falls leaving a lingering acidity like after eating sour candy. Moderate carbonation and very dry finish. The honey character adds sweetness in the back. Light funk helps to cut the sweetness and clean the beer out in the finish. Like a glass of lemonade.” **Overall:** “Very good citrus and tropical fruit complexity with the Brett funk. Pushes a bit past the farmhouse ale level of tart into full-on wild ale sourness, but a nice beer overall. The funk gets overpowered by the acidity. A unique and fun farmhouse beer with a heavy dose of _Brett_ that’s well expressed and not too extreme.”
