What our panel thought

Aroma: “Coffee and chocolate, with vanilla, caramel, and light roast. Some moderate sweetness, with light apple and pear, and a touch of smoky phenolic and metallic notes. Prune and plum are present, along with some oak.”

Flavor: “Spiciness up front, with licorice, mixed with moderate roast. It’s very fruit-forward, with prune and raisin, and had an underlying sweetness. Some chocolate, coffee, vanilla, and roasty notes like burned coffee, and some hops bitterness. Lots of oak and oak tannins. There’s a smoked-wood note, kind of like roasted or smoked meat—it’s fatty, and not a dry smoke.”

Overall: “There were some nice dark fruit notes in this beer, and with the black licorice, coffee, and chocolate, it was fun and interesting. The chocolate notes were sweet and bitter, and the roast was welcome and helped bring out the other flavors of the coffee, chocolate, and biscuits. The smoked wood note could be from an over-charred barrel, but it’s a fatty smoke—I would pair this with some fatty food. This would be easy to drink while enjoying a good book. It’s very contemplative.”

Huge aroma of peanut butter and chocolate. Intense flavors of each as well. The bourbon is identifiable but not overpowering: just the vanilla tannins and sweet oak. The oily peanut flavor is very pleasant. The oak, va-nilla, and chocolate malt balance it well.

__Aroma:__ “Intense coffee that’s deeply roasty with light char, but balanced by rich cocoa and cacao nibs and just a touch of cherry.” __Flavor:__ “Very bitter, big coffee, roast, and chocolate. The coffee is so intense, it’s a bit acrid. Notes of light oak, vanillin, with cherry and plum esters. It’s very earthy, grassy, piney, and very dark, leaving a coating on the roof of your mouth. Relatively dry overall, considering the heavy body and high alcohol. Very sweet yet an acrid/burned bitterness dries out the finish.” __Overall:__ “The coffee blends well with the roast and barrel character without completely drowning them out. The wood is a bit over the top, but the fermentation is clean. The very dark roast coffee lends a perceived dryness, with a peak of sweetness in the middle and roast in the end, and the oak helps balance.”
