Atom Brewing Peach Sour

What the brewers say

“Golden Sour base beer aged for 6 months in used Zinfandel barrels. Then we added two pounds per gallon of fresh Palisade peaches to the barrels for an additional 6 months. Finally, we added another pound per gallon of peaches for 2 more months prior to bottling.”

What our panel thought

Aroma: “Stone fruit (peach, apricot, plum). Some noticeable funk (leather, vegetal/onion, bell pepper). Slight perfumy hops. Mild oak, more wood than vanilla.”

Flavor: “Overripe juicy and sweet peach with a restrained tartness/sourness. Slight funk. Well-balanced wild characteristics. Neutral oak tannins that give a slightly astringent finish. Slightly solvent. Restrained sourness complements the fresh fruit.”

Overall: “The sweetness and juiciness of the peaches balance well with the restrained but complex wild characteristics.”
