“An uneventfully soft nose blooms into a brightly bitter, pithy grapefruit/lime/Meyer-lemon note. It’s in your face and unapologetic, hinting at sweet but never cloying, and crisply tart in the finish. At first take, it’s a bit unyielding, but further sips confirm that it’s curiously sophisticated.”

Crooked Stave Artisan Beer Project Key Lime Tau

Aroma: “Earthy, citrus—mostly lime, but a little dank and hint of vinegar. Light fruit—like lime, peach, and mango—that accentuates the tartness. The faint grassy note is quite appealing. Assertive tart lactic aroma with lime citrus undertones.” Flavor: “Limeade-like citric acid tag teams with a lactic acid tang for an unstoppable duo. Slight lactose sweetness in the middle of the sip dries out in the finish. Rich fruity sweetness up front, with a sour punch in the middle and a nice spice astringency on the swallow to clean things up.” Overall: “Light, refreshing, milder than I expected from the nose. Easy drinking and really interesting—the lactose back sweetens it to keep the tartness from being overpowering and accentuates the light fruitiness. The spice additions add some complexity to the finish and cut the sweetness a bit, while the lingering lime remains intriguing.”

Aroma: “Sweet tropical aromas of orange, peach, pear, tangerine, lemon, grapefruit, over-ripe apricot, and some spicy alcohol notes. Slight pine and earthy notes as it opens up.” Flavor: “Nice tropical-fruit blend: papaya, coconut, orange, light lemon. Grassy here, too. Mild astringency, and oncoming hops bitterness is a good balance to the sweetness of the initial taste. Finish is smooth and slightly sweet but fairly quick to fade.” Overall: “Good balance of flavors that welcomes the drinker to enjoy a second.”

Destihl Synchopathic

**Aroma:** “Strong *Lacto* with light citrus and pineapple, a touch of pear, and a bit of a briny Kalamata olive note up front. The earthy funk isn’t quite barnyard and comes through as grapefruit and tangerine, but is quickly overshadowed by the lactic tartness.” **Flavor:** “Tart and fruity, aggressively acidic and mouth puckering, with some backend sweetness to provide a bit of balance, but it’s still skewed toward acidic. The hops bitterness is assertive with some citrus notes that lean toward lemon juice, grapefruit, and vinegar.” **Overall:** “This is a *Lacto*-forward beer with a touch of dry hopping to bring out some of the fruity notes. The aggressive sourness clashes with the hops and could be too acidic for some but might be right up someone else’s alley if they’re looking for something a bit different and assertive.”
