Council Brewing Company Prickly Pear Beatitude

Aroma: “Moderate horse blanket, sulfur, and a light earthiness that grounds the aroma, keeping it from becoming too airy. Wonderfully floral and fruity aroma, presumably from the prickly pear.”

Flavor: “Strong prickly pear, candy, and green-apple taste, with light raspberry and hibiscus notes. The sweetness is overshadowed by the Brett funk and biscuit maltiness, which is common among young Brett beers. Husky, earthy, somewhat sweet aftertaste.”

Overall: “One of the prettiest beers out there, with a brilliant clear pink that invites you to drink it. The acidity and tart green-apple flavors unite to form a strong first impression that overshadows the prickly pear. The young Brett aroma is complex, with husky, horse-blanket compounds.”
