Golden Coast Mead Savage Bois

What the brewers say

“California wildflower honey, Palomar Mountain spring water, ale yeast, and French oak. It’s a full-bodied, balanced, rich mead.”

What our panel thought

Aroma: “Light ginger, honey floral, and vanilla notes balanced with very light pepper phenols, a bit of banana, and light pear. Some alcohol and a hint of solvent/acetone. Honey with malt notes and a bit yeasty in aroma.”

Flavor: “Fruit forward, mild sweetness blends well, and slightly tart in finish. Touch of oak tannin and vanilla with a light lingering acidity and moderate sweetness. Light carbonation enhances mouthfeel. Wood is mild but gives a very nice balance plus coconut and banana esters. Light oak and semisweet honey finish with moderately high puckering tartness and light tannic drying that helps its structure.”

Overall: “Good mead. This semisweet mead with touches of oak and citrus is just a bit heavy on the alcohol, perhaps due to yeast choice? Ale yeast comes through minutely with touches of phenols and fruity esters. It’s a spritzy, tart easy drinking beverage with nice fruitiness and balanced structure.”

Golden Coast Mead Orange Blossom

**Aroma:** “Nice honey aroma up front (grapes and orange and sweet floral aroma), light tannins, light alcohol, very light fruity berries (raspberries, blackberries), light jasmine flowers, light honey sweetness, a hint of sage. Sweet honey is lightly caramelly and slightly raw-honey, light fruity esters, slightly musky citrus notes, soft alcohol, and light carbonics.” **Flavor:** Soft honey up front with light pear and melon esters. Grape and orange and lemon, with a soft acidic balance. Light sweetness moves to puckering mouthfeel that lingers. Light carbonation helps the balance. Refreshing, but a bit tart. Light earthy floral, touch of mold, citrus, raspberries, and a touch of light earthiness in the aftertaste. Lingering moderate sweetness and medium-high acid. Honey lingers into the finish.” **Overall:** “Nice mead that reminds me of dry lemonade. The alcohol and slight mustiness are a bit detracting, but the acidity and the nice citrus is a good balance. Fruity, citrusy honey. With less tartness and smoother alcohol, this would be a stronger contender.”

Golden Coast Mead Something, Something, Sour Mead

**Aroma:** “Sour citrus in the forefront braced by earthy orange and lime with moderately floral notes. The soft grassy honey becomes slightly musty with mushroom notes and mild oxidation. Mango, apricot, blackberry, and very light lactic notes shine with a touch of light floral honey and light vanilla.” **Flavor:** “Citrus sour notes with a low honey finish make it a bit like a liquid sweet tart. Sharp acidity with light carbonics and a medium-thin body. A light sour puckering with moderate-high drying tannins and light vanilla-oak and citrusy-honey aftertaste. Refreshing, dry fruity chardonnay with a touch of vinegar and vanilla.” **Overall:** “A sour mead with low honey expression. Tannins tend to overpower the light body. Pleasantly refreshing with a unique taste. If you like sour beers, and you like mango and citrus fruitiness, this is a great match.”

Wicked Weed Brewing Pernicious

Aroma: “Lemon, pine, whiffs of citrus, white wine, and fresh-cut grass. Virtually no malt in the aroma. Lemon grass and a mild grape-must character stand out.” Flavor: “Hops flavors of evergreen trees, chardonnay, and lemongrass set the stage for a surprisingly smooth beer. Bitterness is smooth, and despite the appearance of the beer, the malt character is more than just a blank canvas. Finish is dry and pleasant. The complexity in hops flavors that was promised from the aroma is delivered quite well.” Overall: “A delightful IPA. It’s light on the tongue and even spry in its delivery of interesting modern hops varieties. Malt backbone is surprisingly apparent despite the very light appearance. Bitterness is pleasing and complementary. A great IPA that could even pair well with light seafood such as sushi. Citrusy, spritzy fun.”
