What our panel thought

Aroma: “Strong honey aroma up front with fruit esters, slight musk and phe- nolics, and a touch of alcohol hotness. Hint of citrus and floral notes in the finish plus a touch of pinesol or acetone. Sweet, spicy caramelized honey and moderate oxidation."

Flavor: “Spicy notes up front with strong sweetness and fruity esters, plus a bit of oxidation. Strong honey, very sweet with balancing acidity, only a bit cloying. Off- notes of cooked honey, very faint mold, and some autolysis, but still smooth with a bit of citrus acid to balance the finish. Lightly floral honey with spicy phenolic note to the moderately warming alcohol.”

Overall: “A full-bodied dessert mead that’s sweet and strong, but relatively well balanced. The very slight acetone and pinesol notes can be a bit off-putting, but the honey sweetness is pleasant and well presented. A strong but otherwise clean and sweet honey sipper—the more I drink, the more the aroma dominates the experience.”

Moonlight Meadery Desire

**Aroma:** “Black currant, cherry, light rasp- berry, and touch of blackberry braced by a soft spicy-herbal tinge and touch of citrus honey. Background aromas of nutmeg, cinnamon, and maybe a hint of clove. Rich, full blueberry-skin and leftover-juice with soft alcohol undercurrent slowly builds to a light perfume.” **Flavor:** “Huge dark fruits—cherry, blackberry, black currant, raspberry, and light plum, with a light acidity and moderately strong sweetness. Moderate tannic bite balances the sweetness. Touch of black pepper and hints of spice. Tart mixed berry is dry at first then quickly becomes juicy blue-black, tannic, with a spicy-herbal note that covers the warming alcohol.” **Overall:** “This is a big moderately sweet fruit mead with tons of fruit flavor and aroma underpinned by a pleasant tannin and acid balance. The more you drink it the more fun flavors and hidden dimensions you discover. It’s flavorful, but strong, sweet, and better suited to sharing with friends.

Kuhnhenn Brewing Company Orange Blossom

**Aroma:** “Big citrus, light acidity, slight nutty autolysis, and light phenols baance with floral honey and some alcohol warming up front, orange-blossom honey is obvious in the clean, perfumed floral character.” **Flavor:** “Moderately sweet with a bit of citrus, medium acidity, light phenols, and a touch of alcohol. Aftertaste brings out a touch of autolysis (a soft nutty bitterness). Some tannins linger and con- tribute to a light tea quality. Very strong orange-blossom honey notes but a soft, low acidity and mild papery oxidation. A light and thin raw-must flavor, off-sweet grassy and citrusy honey finish with sul- fite notes and long raw honey aftertaste.” **Overall:** “Good clean, accessible expression of orange-blossom honey. Slight tartness blends well with light sweetness. Easy drinking and should pair well with most dishes. It has broad appeal—a nice drinking mead with grassy-citrus honey notes and a good finish.”

Moonlight Meadery Utopian

**Aroma:** “Moderate floral honey, some sweetness, slight dark fruit esters, black pepper phenol, white-wine grape esters, coconut, very light sherry notes, touch of bourbon, light chocolate, some alcohol warming. Honey slow to build but blends nicely with the caramel-oak.” **Flavor:** “Nice honey up front, semi-sweet with strong oak, moderate vanilla, touch of smoky mesquite-like phenols, light chocolate, big coconut, some tannins, some astringency, moderate alcohol. Medium body. Drying finish. Phenols linger. Smooth with a soft finish that is spiked with the peppery alcohol notes rather than tartness.” **Overall:** “This is a fairly complex mead that one should sit and enjoy slowly. It does have a bit of an alcohol bite, but the complexity shines through with varied barrel characteristics. Honey takes too long to present itself.”
