What the brewers say

“Share This: Coffee is an imperial stout with freshly-roasted coffee sourced by Mostra Coffee from the Philippines.”

What our panel thought

Aroma: “Blueberry and pepper spice notes from the coffee. Possibly some other fruit notes such as raspberry, cherry. The base beer is stouty, playing a supporting role without being distracting.”

Flavor: “Medium-full bodied with some definite alcohol warmth. The base beer is more prevalent than on the aroma, bringing a nice dark-chocolate quality to complement the fruitiness of the coffee and the roasted malt.”

Overall: “Rich, strong, and complex. The fermentation character gives it a bit of an alcoholic edge throughout. Great dark malt complexity, and the coffee and a spicy character that pairs well with the base beer.”

WeldWerks Brewing Co. Coffee Coconut Stout

**Aroma:** “Fresh-baked coconut macarons, toasted coconut, vanilla, and light alcohol lend a liqueur aroma. Coconut butter aroma reminds me of the beach. All kinds of coconut nuances and coffee dominate. It’s an interesting combination, but the coffee might be a little too bright.” **Flavor:** “The base beer has some nice roast and chocolate, which carries the toasted coconut and coffee. There’s some nice dark chocolate, giving it a Mounds bar flavor. Strong roasted barley, with some nice fruity esters. A bit of roasty bitterness on the finish that helps balance out the sweetness, and it has a nice creamy feel without being overly sweet.” **Overall:** “This beer is targeted to the coconut lover. Love the dark chocolate and coconut, but the roast on the coffee feels a bit out of balance. It’s a great idea, but a little tweaking might improve it.”

Dogfish Head Barrel-aged Palo Santo Marron

Aroma: “Very smoky, mild roast barley, hints of sour-mash bourbon, maple-soaked meat, with a slight acidic undertone. Booze and light sulfur mix with coconut and caramel.” Flavor: “A balance of beer and wood. Both sides hit at once: roast malt meets wood char, sweet caramel meets oaky vanilla. A bit boozy and hot, with slight tobacco, a touch of smoke that turns to umami. The heat lingers into the aftertaste.” Overall: “Very big and boozy. The oak is not overdone, but it is front and center. Wood lovers will enjoy this one.”

The Bruery Share This: Mole

**Aroma:** “Very mild nose. A light touch of camphor, with a hint of chocolate underneath. A sweet blend of vanilla and cinnamon, with a touch of cayenne. Very light earthy hops, fruity esters of pear and cherry, with notes of citrus and caramel.” **Flavor:** “Sweet malt and chocolate up front, but that quickly gives way to the spice from the cinnamon and cayenne. A quick prick of chile heat doesn’t linger overly long. The hops bitterness is moderate. Some vanilla notes and roast, with malt, toffee, and chocolate malt. The carbonation is a bit high, accenting the spice notes, and some more body on the beer would help round things out. Chocolate, cinnamon, and warming alcohol linger into the aftertaste.” **Overall:** “A big spice winter stout that’s sweet, warming, and even boozy. Has elements of a rum-soaked fruitcake. The chile and spice heat is nicely restrained, and works well with the chocolate in the finish. Doesn’t quite add up to full complexity.”
