Aroma: “Obvious Brett funk. Earthy, sweet, tangy notes, almost like a tortilla chip. Wonderful fruitiness of lemon, mango, and papaya. Slightly spicy and fairly acetic. Big floral character.”

Flavor: “Amazing fruitiness brightened by acidity. Sweet biscuity malt with tangy tartness. An acidic funkiness that finishes slightly sweet for a Brett beer. Medium bitterness, spicy, salty, and fruity.”

Overall: “Very refreshing, great profile of sweet grain with a sour, funky character. This would be an excellent food pairing beer for sushi and pickled ginger. Great acidity and malt complexity. I will dream about this beer when I fall asleep tonight. This is what I want a Brett beer to be.”
