What the brewers say

“A blend of one-, three,- and four-year-old spontaneous beer.”

What our panel thought

“On the nose, nice combination of yeast and bacteria, hitting sweetness, fruit, earthiness with notes of Orange Crush, rosewater, earth, a pleasant rubberiness. Tartness piques the tongue’s interest, but it’s restrained by a clementine sweetness carried on by a big juicy wave of citrus and gumdrop. Clean but not too clean. Unapologetic acidity, but not overdone.”

What our editors thought

“Gentle aroma touches on wheat field, flint, grapefruit, cranberry, a hint of aged hops. Subtle and nuanced, it asks you to explore rather than presenting obvious answers. Bright citrus notes—lemon, grapefruit, tangerine—buoy the flavor with a controlled but contagious acidity lightly buffered by the substantial body and mineral undertones. Thoroughly elegant in what it doesn’t say. Beautifully blended to balance vibrance and gravitas.”
