ALDC mitigates the resurgence of vicinal diketones (VDKs) associated with hop creep. Dry hopping adds hop diastase enzymes, which can cleave dextrins into fermentable sugars, causing a small fermentation to restart. With modern hoppy beers and aromatic hop varieties that have lower kilning temperatures than previously, the potential for VDK presence is great than ever.

In a study, the renewed availability of fermentable sugars when dry hopping resulted in further yeast activity and VDK production in control samples, but not when ALDC (3 g/hL) was added.
