Civil Society Fresh IPA Recipe

This New England–style IPA from Civil Society Brewing Co. got its start as a homebrew recipe by Cofounder Karl Volstad and has become the flagship IPA for the South Florida brewery.

MALT/GRAIN BILL 

9.3 lb (4.2 kg) 2-row malt
1.17 lb (531 g) White wheat malt
1.17 lb (531 g) Flaked wheat malt

HOPS SCHEDULE 

0.5 oz (14 g) Columbus [14% AA] at first wort
0.5 oz (14 g) Columbus [14% AA] at 10 minutes
1.5 oz (43 g) Columbus [14% AA] at whirlpool
1.5 oz (43 g) Columbus [14% AA] at dry hop
5 oz (142 g) Citra [12% AA] at dry hop

YEAST 

Use your choice of expressive English ale yeast. We use Vermont Ale yeast.

DIRECTIONS 

Mash at 152°F (67°C). Boil for 60 minutes following the hops schedule. Ferment at 67°F (19°C) for the first day of activity, then allow the temperature to free rise to 72°F (22°C).
