Tom Wilmes profiled Kyle Hollingsworth in Issue 2 (Summer 2014) of _Craft Beer & Brewing Magazine®. _Hollingsworth graciously shared with us this recipe for his birthday brew. Of it he says, “The hops profile is a work in progress. I’ve never tried corn before so I’m kind of excited to see what that brings.”

10.5 lb (4.8 kg) pale malt (2-Row)

HOPS SCHEDULE

0.66 oz (19 g) Falconer’s Flight (Magnum alt) at 60 minutes
0.66 oz (19 g) Falconer’s Flight (Simcoe alt) at 20 minutes
0.5 oz (14 g) Centennial (Amarillo alt) at 15 minutes
1 oz (28 g) Amarillo at dry hop (14 days)

YEAST

American Farmhouse Blend (Platinum Series) (White Lab #670) Yeast-Ale

DIRECTIONS

Mash for 75 minutes at 150°F (65°C). Boil for 60 minutes.

A recipe by Kyle Hollingsworth? Now you’ve got me all star struck! I haven’t tried this yeast blend, but I like saisons with a bit of Brett funk. Saison with a good portion of Amarillo dry hops and Brett sounds great to me.

Recipe is built to yield a batch size of 5 gallons (19 liters) and assumes 72% brewhouse efficiency.
