“We brew all our DIPAs to be as pale and hazy as possible,” says Derrick Robertson, cofounder of BreWskey in Montreal. “New Zealand hops really help in this regard, since they always help make that milky haze we look for. There is something magic about Rakau and Riwaka that we absolutely love—but if you can’t find Riwaka, Nelson also works great.”
