Ninkasi Brewing Company Tricerahops Double IPA

What the brewers say

“Earthy, floral hops aroma and flavor are abundant in Tricerahops. The bigger body and higher alcohol balance the large volume of hops to create a beer that is very flavorful while still being balanced and drinkable. This beer can be deceiving as it is very smooth.”

What our panel thought

Aroma: “Orange, grapefruit, lots of fruit, some peach, slight pine. Nice malt sweetness. Smells very juicy. The most malt-forward beer so far. Caramel and toast along with a bit of tropical fruit and spiciness from the hops. A nice combination, but it’s unexpected for a hoppy style like this.”

Flavor: “Some nice orange and citrus fruit character, with some malt sweetness in the front. Grapefruit-peel bitterness hits in the middle and carries through the finish with some sweetness and strong bitterness. Pretty rich malt bill. Hops character is resinous and intense.”

Overall: “This beer has some bold flavors with some nice orange fruit character and strong grapefruit sweetness and bitterness. It needs a little more sweetness in the finish to balance the bitter character. It’s missing the huge hops one expects from a double IPA.”

Foothills Brewing Seeing Double

Moderate orange-pineapple-pine aroma; light floral, grassy notes. Moderate malt sweetness—bready, caramel, honey—with firm bitterness not quite cutting the sweetness. Spicy, grassy hop flavors with lower orange-citrus.

Samuel Adams / Boston Beer Company Rebel Rouser

**Aroma:** “Nice orange notes. Slightly minty with hints of phenols that lean slightly medicinal. Earthy hops, moderate esters, and a light malt.” **Flavor:** “Good blend of malt sweetness with some nice grapefruit, orange, and pine notes. The sweetness underpins both the hops and the malt and helps balance the bitterness. Mint from the nose is subdued a bit on the palate, but it’s still a bit of a train wreck of flavors—raw malt sweetness and caramel, cardboard oxidation, strong fruity esters, and an out-of-place light tartness.” **Overall:** “A good IPA with a strong PNW hops profile—the dance between malt and hops worked well in this beer for me. Doesn’t dry out like most DIPAs, and the bitterness is a touch overdone. A bit muddled in the flavor presenta- tion—if I had bought this, I’d be a bit disappointed.”

Ninkasi Brewing Company Total Domination

**Aroma:** “Nice fruity juicy hops aroma— blueberry, raspberry, oranges, and some evergreen. Honey sweetness with a slight spicy, low phenolic note and a touch of plum.” **Flavor:** “Full avor both from the body and the hops character. Loving the blue- berry! I don’t know how it got into this beer, but it’s a welcome twist. Caramel malt backbone elevates the hops to just where they need to be. Bright back-of- the-tongue bitterness and an incredibly creamy mouthfeel.” **Overall:** “I really liked this IPA—it’s full of flavor, and all the flavors seemed to complement each other. A fun riff on a fruit-forward American IPA with outstanding berry character that’s interesting and unusual. Appropriate malt character and bitterness points to how well blended and integrated it is. Big juicy notes with a moderate bitterness.”
