Funky Buddha Brewery’s unfiltered German-style wheat beer is its number-one core beer. It’s full on flavor yet light on the palate. Hefeweizen yeast creates the compelling aromas of bananas, citrus, and cloves. This is a super-easy recipe, which is how Hefeweizen ought to be. We’ve scaled the recipe to 5 gallons (19 liters) and assume 72 percent brewhouse efficiency.
5 lbs (2.27 kg) Pilsner malt
5 lbs (2.27 kg) wheat malt
0.25 oz (7 g) Nugget hops [12.60%] at 60 minutes.
Mash at 152°F (67°C) for 60 minutes. Boil for 60 minutes following the hops schedule.
Wyeast 3068 Weihenstephan Weizen or White Labs WLP300 Hefeweizen Ale
If you want more banana flavor, ferment at the warmer end of the yeast’s range.
