Birds Fly South Ale Project Sometimes Goats

What the brewers say

“Intense malt notes of raisin, caramel-drizzled toasted breads, and a pleasant hop bite.”

What our panel thought

“By-the-book malt with some toffee, hints of toasted coconut, maybe light fruit, but at the expense of depth. Spicy and floral with undertones of toffee and ribbon candy. Clean and crisp on the finish, almost veering toward easy drinking. Well executed, just a bit understated.”

What our editors thought

“Sweet toasty bready malt in the nose with just a touch of herbal hops. Significantly sweet in the sip, but clean with a crisp herbal edge. Sweet, yet sophisticated.”

Birds Fly South Ale Project The Time it Takes

“Fruity aromas of apples and cherries. Smoked component is reserved, barely detectable in the aroma. Flavor is malt-forward, light oak and cherry-like smoke, with earthy, floral hops. Complex and interesting, the flavors play off each other quite nicely. Medium to medium-dry finish.”

Birds Fly South Ale Project Czech-Style Pilsner

Subtle aroma—light sweetness, nuttier malt edges, zesty-floral hop notes. On the palate, a light and dusty bitterness, as light, clean, sweet malt pushes some floral-zesty hop flavor. Finishes clean and dry. Pleasant and bright hop character. Easy drinking. Slightly rustic.

Birds Fly South Ale Project Out Back Counting Stars

Amazing aroma—huge pepper, citrus, and fresh tropical fruit grounded by damp wood-and-leather funk. _Brett_ orange juice. Bitterness fights with _Brett_ funk in the flavor, crowding out hops but leaving a citrus residue. Unbalanced toward _Brett_ and bitterness.
