Southern Tier Brewing Company MOKAH

What the brewers say

As scientists, our brewers use their materials to exacting standards. As artists, they couldn’t resist the temptation to combine two of our Blackwater Series Imperial Stouts: Jahva and Choklat. Together as Mokah they are an inimitable expression of two of the world’s most sought-after flavors. Enjoy Mokah stout with, or as, your favorite dessert!

What our panel thought

Aroma: “Huge chocolate nose, almost reminiscent of chocolate extract, with little roasted malt or coffee coming through. Very chocolaty (milk chocolate and Hershey’s syrup) and sweet. It is hard to get past the chocolate in the aroma.”

Flavor: “Huge chocolate flavors, mostly reminiscent of a sweet chocolate bar or a chocolate factory. Coffee and roasted malts are subtle and help to balance, but finish is sweet and chocolaty with some slightly minty flavors. Tastes exactly like a mocha frappuccino. Very faint hops bitterness and some alcohol warmth that provides a nice accent.”

Overall: “Very complex, unique beer that showcases chocolate more than coffee. It tastes like a sweet chocolate bar in a glass. It would serve as an incredible example of a chocolate stout, but is lacking as a chocolate coffee stout. This isn't so much a beer as it is a dessert. However, the sweetness is not cloying, and the finish is clean.”

Southern Tier Brewing Company Choklat

**Aroma:** “Chocolate chip ice cream, covered in Hershey’s syrup, topped off with a chocolate wafer. I can even smell the bready aroma of the sugar cone. Light fruit esters (pear or passion fruit). Chocolate fudge, cocoa powder, toasty. Very intense milk chocolate.” **Flavor:** “Aroma tricks you into expecting sweetness, but the flavor delivers more balance. Sure, it’s still just as chocolaty, but hops and roast malt do their best to upstage it. The roast flavor pulls the chocolate toward mocha. There’s an earthy/citrus hops flavor and then a powerful bitterness from a tag-team combination of roast and hops. Both sweetness and bitterness linger into the finish.” **Overall:** “Nice roasted barley base, layered with sweet chocolate and some coffee notes. Lingering sweet chocolate finish. Sip this to keep warm all winter long.”

AleSmith Brewing Co Speedway Stout Variant #2: Mostra Coffee & Coconut

“Black pour with ruby highlights and a firm tan head. Reserved coffee-forward nose with some lingering dark fruit notes. Soft and pillow-top malt profile with notes of berry-forward coffee, light coconut, and chocolate. Coffee-like bitterness throughout the sip. Sweet and roasty finish with soft coconut notes.”

Southern Tier Brewing Company Warlock

**Aroma:** “Caramelized brown sugar, toffee, and vanilla notes with subtle chocolate and cinnamon notes. Pumpkin is a bit subdued, but enhanced a bit with the caramel sweetness.” **Flavor:** “Very strong and unique vanilla, caramelized brown sugar, crème brûlée flavor up front with cinnamon and pumpkin-pie spices coming through next, followed by subtle milk chocolate notes. The spices enhance the profile of this beer and complement the malt sweetness and the vanilla. Pumpkin is there, but more of a background.” **Overall:** “The spice level is excellent and the base beer supports it well. Very enjoyable and unique. The flavors blend well, and the roast and vanilla character add good complexity. Nice caramel malt character and pumpkin notes with a fun spice character.”
