Despite the impression of sweetness in the aroma, the barrel’s roast character and a light spirit note perfectly temper things and create a beer that is both roasty and sweet with a wonderful balance.”

Lucious notes of chocolate and bourbon jump out instantly on the aroma, which flows perfectly into a chewy-bodied stout full of smooth chocolate bourbon cake. The base beer holds up excellently against the aging and blends the barrel character in expertly. Delicate spices dance over waves of sheeting chocolate while riding the line of overtly sweet. Finishes out fairly dry.

New Belgium Dominga Grapefruit

New Belgium wood cellar blender Lauren Limbach was gifted a new foeder that she aptly named Dominga—a play on the Spanish word for Sunday.
