Named for the cathedral in Köln and the beautiful square out front, this is a slightly different take on Kölsch. It’s less hoppy with a kiss of wheat, and the hops add a slightly tart spicy flavor.

MALT/GRAIN BILL

0.5 lb (227 g) Wheat Liquid Malt Extract
6 lb (2.7 kg) Pilsner Liquid Malt Extract
1 lb (454 g) Carahell

HOPS SCHEDULE

1 oz (28 g) Saphir at 60 minutes
1 oz (28 g) Saphir at 10 minutes

DIRECTIONS

Steep the Carahell for 20 minutes at 160°F (71°C). Boil for 60 minutes following the hops schedule.

YEAST

German Ale (Wyeast 1007/2565 or White Labs WLP 036/029)
