MALT/GRAIN BILL

8 lb (3.63 kg) Pale Malt
1 lb (0.45 kg) Dark Munich
0.75 lb (340 g) Special B
5 lb (2.27 kg) pumpkin

HOPS AND ADDITIONS SCHEDULE

0.5 oz (14 g) Simcoe at 60 minutes
0.5 oz (14 g) Saaz at 15 minutes
0.5 oz (14 g) ginger root at 12 minutes
2 cloves at 12 minutes
1 cinnamon stick at 12 minutes
0.5 oz (14 g) Saaz at knockout

DIRECTIONS

If using fresh pumpkin, cut into quarters, seed, and bake in oven at 350°F (177°C) for 45 minutes. Scoop pumpkin from skin. Add baked pumpkin or canned pumpkin to the mash. Mash the grains and pumpkin for 60 minutes at 154°F (68°C). Boil for 60 minutes, following the schedule for hops and other additions.

4.75 lb (2.15 kg) Pale Liquid Malt extract
1.5 lb (0.68 kg) Pale Malt
0.75 lb (340 g) Dark Munich
0.75 lb (340 g) Special B
5 lb (2.27 kg) pumpkin

HOPS AND ADDITIONS SCHEDULE

0.5 oz (14 g) Simcoe at 60 minutes
0.5 oz (14 g) Saaz at 15 minutes
0.5 oz (14 g) ginger root at 12 minutes

0.5 oz (14 g) ginger root at 12 minutes

DIRECTIONS

Boil for 60 minutes following the schedule for hops and other additions. Add baked pumpkin or canned pumpkin to the boil for the last 15 minutes.
