Yeast of Eden Internal Dialogue
What the brewers say
Contemporary interpretation of vieille saison... open-fermented and laid to rest in oak barrels for 30 months.
What our panel thought
Mild aroma with nice complexity—lemon, apricot, SweetTarts, leather, hay, and the shadows of piney hops. Balanced tartness carries the flavors: soft biscuit backed by surprising hop-bitterness, with a strong floral hit of carnations and gardenias. Slightly unpleasant astringency.
What our editors thought
Mushroom, damp earth, and cellar-must make for an aroma wise beyond its years (with a knowing citrus wink). The sip is broad, toasty, with caramel-orange notes in the middle and lemon acidity on top, for juiciness that balances mineral funk.
