Birds Fly South Ale Project Fat Ma

What the brewers say

"This golden brew was lagered for more than 2 months and hopped with Topaz and Sterling. Notes of stone fruit are balanced by a floral, peppery finish."

What our panel thought

"Sweet malt nose, yogurt-like flavor turns into a flowery hops finish that lingers nicely. Would fit well as an aperitif in a multi-course offering."

What our editors thought

"A bit of corn and barley on the nose with a touch of light lager sweetness, while the sip falls into the sweet/vaguely citrusy/soapy and floral camp."

Full Sail Pilsner

**Aroma:** “Peach-like esters with very mild hops, along with some indeterminate malt. I think this could work better as a mild saison (except for the DMS). Some malt sweetness heightens the soapy, floral character.” **Flavor:** “Earthy, woody hops flavor followed by a strong bitter finish. Slightly warming alcohol. I’m still getting the peach ester and intense floral flavors, like tulip or geranium. Bitterness balanced with a biscuit malt backbone. Both flavors blend together well.” **Overall:** “The color and hops are in line with style, but the rest is a bit distracting. A unique and assertive interpretation to the style that is a bit heavy-handed with the use and choice of hops. An interesting beer to drink, but not something I’d seek out if looking for a refreshing Pilsner on a hot day.”

Big Choice Pinhead Pilsner

**Aroma:** “Light fruitiness with a smattering of spice and pine in the hops. Warm, toasty, bready malt with a touch of caramel. Subtle lemon blends with the Continental malt sweetness. Aromas overall are subtle.” **Flavor:** “Pleasant, unique hops flavor, with a mix of fresh grape, honeysuckle, and light spices. Some bitterness allows the other flavors to shine, but the hops are muted. A hint of toasty biscuit malt on the back end, but lingers with a residual sweetness that seems out of character.” **Overall:** “This beer doesn’t break any Pilsner conventions, but it definitely tweaks them, with some fun and unique flavors that aren’t typically found in this style. A well-crafted delight, with clean maltiness and minimal hops bitterness. This session beer is easily drinkable on a summer day.”

Birds Fly South Ale Project Czech-Style Pilsner

Subtle aroma—light sweetness, nuttier malt edges, zesty-floral hop notes. On the palate, a light and dusty bitterness, as light, clean, sweet malt pushes some floral-zesty hop flavor. Finishes clean and dry. Pleasant and bright hop character. Easy drinking. Slightly rustic.
