Birds Fly South Ale Project The Time it Takes
What the brewers say
“Lightly toasted bread malt notes and Noble hops accentuated by a light addition of smoked malt.”
What our panel thought
“Fruity aromas of apples and cherries. Smoked component is reserved, barely detectable in the aroma. Flavor is malt-forward, light oak and cherry-like smoke, with earthy, floral hops. Complex and interesting, the flavors play off each other quite nicely. Medium to medium-dry finish.”
What our editors thought
“Very light peach and smoke notes in the aroma, with a backing breadiness that persists in the sip and softens the smokiness. Subtle and refined.”
