Finback Brewery Totality

What the brewers say

Mixed-culture sour ale with pineapple and blueberry.

What our panel thought

Moderate leathery funk up front. Notes of blackberry and blueberry with a note of acidity. Light floral and vanilla. Hint of pineapple as it warms. Moderate acidity is balanced with a note of earth funk and a slight blueberry sweetness. The pineapple tartness doubles down on the acidity of the fermentation. Fairly puckering.

What our editors thought

On the nose, a woody, meaty, leathery note with pineapple and blueberry undertones offers a weird entry, but the flavor is another story. On the sip, a general berry note pushes forward with an intense sharpness and a touch of pineapple brightness. The acid is the star of the show, and the fruit can’t seem to grab the spotlight.

REVIEWS FOR YOU >

Finback Brewery Rhythm of Existence

“Crisp, bright fruit aromas with a chewy body that isn’t overly sweet or sour and layers that persist on the tongue. The sourness has just the slightest edge, adding another dimension without crossing the line. Despite the initial sweet aroma, overall sweetness is moderately low.”

Crooked Run Brewing Persica

“Subtle peach character is on the fringes. Quite tart in the body with an earthy astringency to the finish. Pleasant, refreshing, and _very_ sour.”

Finback Brewery Incarnation

Viscous dark void. Intense coffee nose, with maple, prune, and vanilla. Round and smooth across the palate—luxurious notes of chocolate, coffee, and bourbon. Vinous barrel and roast cut the sweetness a bit, but balance leans dessert-like.
