11.9 oz (337 g) Weyermann Carafa Special III
10.9 oz (309 g) Weyermann Carafoam
4.6 oz (130 g) acidulated malt
HOPS SCHEDULE
2.5 oz (71 g) Hallertauer Mittelfrüh (3.2% AA) at 90 minutes

DIRECTIONS
Mill grains. Mash at 150.5°F (66°C) for 60 minutes. Lauter and sparge. Boil for 90 minutes, adding hops according to the schedule. Chill to 52°F (11°C) and pitch yeast. Slowly raise to 55°F (13°C) over the first two days. After one week, allow free rise to 58°F (14°C) and hold there for another one to two weeks. Optionally, allow free rise to 65°F (18°C) for diacetyl rest. Drop to 48°F (9°C) for two weeks, then 38°F (3°C) for another two to four weeks before serving.
