This global collab recipe comes via Sebastian Sauer, the nomadic brewer behind Germany’s Freigeist Bierkultur. He designed and released the beer in collaboration with Japas Cervejaria, a brand run by four Japanese-Brazilian women in São Paulo, Brazil. Finally, they contracted with Urban Chestnut in St. Louis to produce this German-inspired but nicht-zu-Reinheitsgebot hefeweizen that gets some malted oats in the mash, a single decoction, and generous whirlpool additions of Saphir hops and fresh ginger.
