HOPS SCHEDULE
1.7 oz (48 g) Columbus at 30 minutes [47 IBUs]
3.7 oz (105 g) Zythos at whirlpool [37 IBUs]
3 oz (85 g) Cascade at dry hop
3 oz (85 g) Chinook at dry hop
1.5 oz (43 g) Cluster at dry hop

YEAST
Fermentis SafAle US-05 American, or other Chico strain

DIRECTIONS
Mill the grains and mash at 153°F (67°C) for 60 minutes. Lauter, sparge, and top up as necessary to get about 6.5 gallons (25 liters) of wort—or more, depending on your evaporation rate. Stir in the brown sugar and boil for 60 minutes, following the hops schedule. At flameout, stir 5 minutes to conduct a whirlpool, add whirlpool hops, and allow to rest for 20 minutes. Chill to 68°F (20°C), aerate well, and pitch plenty of healthy yeast. Ferment at 70°F (21°C). When the beer reaches terminal gravity, add dry hops. After 5 days, cold crash, package, and carbonate.
