Unblended, mixed-culture golden sour stock, selected from one of our Mastro Bottaio puncheons. Finished in a single Oloroso Sherry cask.

What our panel thought

Musty mushroom funk, bordering on umami, with leather, oak, vanilla, wet hay, lemon, slate. That mineral emerges more in the flavor, but the acidity is a bit much. Dry, puckering finish. Barrel-funky, sour, but enjoyable.

What our editors thought

Berry and red-wine grape on the nose, with soft oak and barnyard Brett. The sip starts light and fruity, with a tight acid-meets-caramel wave. That fruity acidity builds—temper by pairing with chèvre or subtle blue cheese.

__Aroma:__ “A dance between tart cherry and sweet peach with a little apricot in the back. The fruit is a bit hidden with a sort of lactic sour milk aroma up front. A bit earthy and wet hay. Some low-level general fruitiness in the background.” __Flavor:__ “Tart citrus flavor that reminds me of Smarties candy, even with a light chalkiness. Chewy body with a medium carbonation. Finishes with a medium tartness that is medium lasting. As it warms, the peach and cherries start to come out. From the funk, it tastes like my grandfather's tack room smelled: straw, dust, sweat, leather. Low overall fruit with intense citric acidity. Very dry.” __Overall:__ “The fruit character is somewhat hidden, but if you let this beer warm up slightly it will expose the peach and cherry flavors. The complexity is enjoyable with the funk, fruitiness, and tartness playing well off one another. A bit more fruit and a bit less acidity would make beer better.”
