“Made with Franconian barley and wheat and an elongated fermentation and aging with one strain of Saccharomyces, two strains of Brettanomyces, along with lactic-acid bacteria in neutral oak. Bottle conditioned with native yeasts and bacteria.”

“Old-school Belgian funk meets new-school assertive sourness. Complex fermentation character with hints of light fruit, leather, and spice reminiscent of more traditional Belgian farmhouse styles. Fantastic balance and complexity, the sourness and wilder characters create layers of flavors that persist through the finish. The flavor profile packs all those ‘lambic-like’ flavors into a beer with a bit more malty sweetness and an assertive acidity, creating an interesting mélange of old meets new in the sour-beer world.”
