Burial Beer Co The Separation of Light and Darkness (2020 Harvest)
What the brewers say
Made with North Carolina barley and wheat before aging in a foeder. Conditioned on fresh Carolina peaches.
What our panel thought
Intense overripe peach aroma, so vibrant you can smell the fuzz. That fresh-peach note carries into the flavor, where it shines but comes across a bit more funky with leather, oak, horse-blanket undertones. The moderate acidity helps balance the sweet funk and ties things together well.
What our editors thought
Powdery soft peach on the nose with a subtle sweaty tropical funk. The sip is clean and crisp with acid that’s present but not overwhelming, while the gentle stone fruit intermingles with lemon lactic notes backed with noticeable malt and a touch of bitterness, for a fruit experience that complements without overwhelming the beer.
