"Inspired by the Belgian gueuze tradition. Blend of 1-, 2-, and 3-year-old barrels inoculated with our culture and a few barrels from our spontaneous program for the perfect blend of acidity and character."

"A wonderful complementary blend of barnyard funk, assertive tartness, and acidic sourness. Aromas of leather, horse blanket, stone fruits, and oak are just as complex in flavor as they are in the nose. Flavors of grapefruit, peach, wet hay, leather, and horse blanket are all wonderfully expressed within the oak-derived tannic canvas. This beer is supremely complex and full of life with every nuanced aspect equally present and accounted for. Phenomenal!"

"An olfactorily stunning funk component makes for one of the best wild and sour beers we've ever sniffed. It's subtle yet complex, mineral yet not overbearing, with layers of citrus and white-wine grape. The sip is similarly balanced with equal parts lambic funk, sweet white grape, and subtle citrus.
