Noble King is a medium strength, highly attenuated, unspiced farmhouse ale brewed with an abundance of organic noble hops and fermented with wild yeasts from the Texas Hill Country. Unfiltered, unpasteurized, and 100% naturally conditioned.
What our panel thought
Aroma: “Tangy tartness, sweet citrus fruit. Dirty, earthy, and horsey. White grapes and funky acidity. Floral, peppery, and earthy character. Unique phenolic spiciness with a bright citrus zest.”
Flavor: “Citrus tartness with tropical fruit and slightly sweet malt. Earthy. Finishes tart with a lactic bite. Very lemony. Hints of spice and an interesting, peanut-like nuttiness. Not a ton of Brett character, but the lactic went to town.”
Overall: “A very refreshing, delicious beer. Lactic acid dominates. Slight sweetness. Enjoyable fruitiness, particularly the lemon. Tartness is good but not tooth-melting. The lemonade of beer. If you combined kombucha and lemonade and carbonated it, that’s what this tastes like.”
