What our panel thought

Light yellow tint. Fruity aroma suggests raspberry, peach, mango, with an earthy back note. Chameleon-like fruit flavors evoke melon, berry, pear, apple, bubblegum. Medium-dry, soft; finishes clean but a touch sweet. Good drinkability.

What our editors thought

Watermelon-strawberry aroma is almost buttery soft. The sip is more direct, with soft herbal sweetness and more watermelon-strawberry notes that quickly fade into lingering sweetness. Not overtly sweet, the gentle fruit notes are a pleasant reprieve.

Council Brewing Company Prickly Pear Beatitude

**Aroma:** “Moderate horse blanket, sulfur, and a light earthiness that grounds the aroma, keeping it from becoming too airy. Wonderfully floral and fruity aroma, presumably from the prickly pear.” **Flavor:** “Strong prickly pear, candy, and green-apple taste, with light raspberry and hibiscus notes. The sweetness is overshadowed by the Brett funk and biscuit maltiness, which is common among young _Brett_ beers. Husky, earthy, somewhat sweet aftertaste.” **Overall:** “One of the prettiest beers out there, with a brilliant clear pink that invites you to drink it. The acidity and tart green-apple flavors unite to form a strong first impression that overshadows the prickly pear. The young _Brett_ aroma is complex, with husky, horse-blanket compounds.”
