What the brewers say

“A blend of oak-aged, mixed-culture beers rested on organic, house-roasted beets. Additions of Meyer lemons and coriander lend citrusy acidity to notes of raspberry and subtle damp earth.”

What our panel thought

“Vibrant magenta color, brilliantly clear. The nose hits with a sweet and earthy punch, like a freshly cracked jar of Grandma’s home-canned beets; a light tart-citrus undercurrent adds some brighter lift to the aroma. Gently tart and sparkling on the palate, with lemon notes and a juicy impression that again provides lift to the earthy beet flavor. Low Brett notes in both aroma and flavor. Dry, tangy, slightly salty, letting the ingredients do the talking and with a mouthfeel that doesn’t let them down. Unusual, delicious.”

What our editors thought

“Earthy, berry, citrus, and light vanilla-like oak notes in the aroma create deep aromatic contrast. Dynamic interplay between the earthy and fruity beet flavors, with citrusy acidity, creates a fresh tension. Very light, mineral-like fermentation funk notes accent rather than dominate. Thoughtfully and gracefully balances some strong and potentially polarizing flavors, in a stunning beer.”
