What the brewers say

A collaboration with our friends from Cycle Brewing, this imperial stout is aged in brandy barrels with vanilla and cinnamon.

What our panel thought

Cinnamon is breaking down the door, and vanilla is calling for backup. This beer is straight up cinnamon and vanilla throughout; it does not dissipate, and it does not care. Bourbon scoots on in at the end and rounds out the beer wonderfully. Chocolate pulls it all together, and the sweetness isn't overbearing. The flavors are well-integrated, and it feels like you need to carve out tunnels in a large tub of ice cream to create some beer moats with this. Get a bonfire going and don't share this bottle.

What our editors thought

An intense and sweet cinnamon bun with vanilla nose pushes forward, then the sip balances with light touches of milk chocolate in a loose but rich body. Enjoyable despite its rather vague definition.

Firestone Walker Brewing Company Velvet Merlin

**Aroma:** “Some chocolate with a back of roastiness that is both sweet and earthy. Dried cherry esters are in the background. There is an oatmeal sweetness on the nose (sweet oats). Light touch of alcohol, but complementary.” **Flavor:** “Moderately sweet up front that fades into a moderate bitterness. Beautiful mouthfeel and medium-to-full body from the oats with a creaminess that coats the tongue and lingers into the finish. Medium sweetness with roasted and earthy complexities and some cherry notes. This beer has a nice smoothness that flows through the taste.” **Overall:** “The full satisfying body that isn’t sweet makes this very easy to drink. Toasted malt, chocolate, and dark fruit esters add a great complexity. The creaminess was nice, and the malt body showed the roast sweetness and roast bitterness. The aftertaste showed a sensitive balance of chocolate and coffee.

Side Project Brewing Beer: Barrel: Time

Massive dark chocolate and barrel aroma; toasted marshmallow, dark cherry, and oily peanut-butter notes. In flavor, sweetness and intensity all around—lots of chocolate, vanilla, and roast. Over-the-top but tasty.

Oskar Blues Brewery Barrel-Aged Ten FIDY

**Aroma:** “Dark chocolate nibs, moderate vanilla, light oak earthiness, umami, and caramel, touch of coconut. Medium alcohol.” **Flavor:** “Rich chocolate-syrup flavors up front, perfect for ice cream. Sweet caramel and a touch of vanilla and coconut with coffee notes going into the aftertaste. Medium alcohol on the back end (but not harsh) mixed with a slight burntness. Touch of umami. Cherry esters are rich and sweet. Some tartness gives the finish a little tang. Barrel notes are subtle—vanilla, and slight tannin on the finish helps to dry it out.” **Overall:** “Big dark chocolate–dominated imperial stout. Touch of ethanol warming, a touch of umami, and a light pleasant anise/licorice thing that all flow together nicely. The alcohol level is quite balanced with the high chocolate and caramel notes. If not careful, I could consume a lot of this.”
