Ecliptic Brewing Barrel-aged Oort

What the brewers say

"Named after the mysterious region of our solar system that breeds comets, Oort Imperial Stout has massive amounts of roasted barley combined with three types of Caramel malts for a rich, full mouth feel. Chinook, Cascade and Sterling hops lend a balanced bitterness and subtle hop flavor. This barrel-aged version slumbered for twelve months, imparting notes of rich, bitter chocolate, vanilla and oak."

What our panel thought

“Pleasant aroma of rum-soaked candied dates, raisins, and dark chocolate; hints of roast malt, vanilla, caramel. Body’s on the thin side, lacking some of the more decadent qualities of the style.”

What our editors thought

“Nose of toasted bread, lightly burnt caramel, and touch of buttery oak. Flavor plays it straighter, with light oak, caramel mid-notes, and light burst of roast cacao nib. More vibrant than lux.”

Westbound & Down Brewing Company Western Justice (2024)

“Aroma of chocolate, cherries, and black tea. Malty waves of chocolate, anise, and blackberries, with a substantial hop bitterness. Hoppiness helps counter the sweetness, but still borders on cloying. Finishes on some lighter notes of vanilla and oak. Surprisingly drinkable.”

Full Sail Brewing Co. Bourbon Barrel Stout

**Aroma:** “Vanilla and oak up front, with dark chocolate and chocolate syrup. Some toasty malt and roast, as well as dark stone fruit esters, and sweetness from the bourbon barrel. Overall, it’s fairly muted.” **Flavor:** “Moderate oak with cherries, chocolate, light smoke, and light vanilla mixed with some bitterness. The sweetness is nicely balanced by the roast, and it slowly fades. Notes of light coconut and almond are present, as well as lots of barrel character—but the vanilla and oak lead the charge. The medium body doesn’t quite stand up to the barrel treatment, and the roast bitterness lingers a little too long.” **Overall:** “Lots of barrel, but not a lot of beer—the barrel overshadowed it. The vanilla and oak were nice, but there wasn’t enough malt or body to back it up. There’s too much bourbon overall. It’s an interesting beer with nice barrel character, but not enough beer to overcome the bourbon and barrel.”

Ecliptic Brewing Oort Imperial Stout

Intense roast and toast notes in both aroma and flavor are complemented by piney hops note to create a properly bitter and boldly roasted stout. It’s a bit unsophisticated and lacks some of the subtle complexity, es-pecially in the malt character. If you love roasted malt notes, this is the stout for you.
