“This mead is made of a crystallized little darker honey containing nectar from rapeseed, white clover, cornflower, and sallow. It is one of our sweetest meads.”

What our panel thought

Aroma: “Slightly cooked honey up front, nice sweetness, slight tartness, slight alcohol warming. Cocoa nibs with a touch of cold brewed coffee. Vanilla, earthy, light nutty, caramel, touch of mango, moderately-rich melanoidin-like sugary honey, with light phenolics and lightly sherry-like alcohol with moderate acid/sourness.”

Flavor: “Mild honey up front, dark fruit esters (lpear and mango), drying finish, some tannins, medium body, some alcohol warming, cooked honey, moderate cocoa nib and coffee, caramel, vanilla, slight peppery phenol, warming alcohol but smooth, low acidity, moderate sweetness, but not dessert strength. Moderate bitterness, lingering sweetness, lots of caramel and coffee in the aftertaste, some lingering alcohol notes. Floral honey with alcohol warmth.”

Overall: “Rich flavor, nice depth around the honey. The light alcohol is noticeable, but not too detracting from the overall flow of the mead. This is a rather earthy mead with a moderate coffee- and caramel-like note to it. It would be quite excellent with chocolate and dark fruits.”

Aroma of pineapple, lemon, lemongrass, leather, oak-derived vanilla, and stone fruit; cereal-like sweetness dances in the background. In the flavor, strong acidity—lemon, pineapple, black tea, funky horse blanket, leather, and hay. Complex, interesting.

“Funky, horsey nose. Acidic up front but quickly moves into more complex notes of earth and dry sherry with dry lemon. Dry finish feels appropriate. A wild ride from acid to complexity to clean, quick finish.”

**Aroma:** “Blueberry and sour black- berry aroma backed by a strong floral honey and a general fruitiness with pronounced esters. Slight spicy phenol, becomes more berry-skin with undercur- rent of slightly cooked honey.” **Flavor:** “Light bitterness and a long lingering acidity contrasts with a touch of raspberry and light lingering black pep- per with just a hint of tannic bitterness. Tart cherry hits first with blackberry flavor following. Not a lot of honey expression for a “sweet” mead, and the acid and alcohol are apparent in the finish. Very tannic and a bit unbalanced.” **Overall:** “This dry, effervescent mead has a nice light fruitiness with just a touch of earthiness. A nice expression of blueberry, but the astringency is a tad overdone. Tartness and tannins run over the delicate honey. Berry flavor is strong and competes with the amount of heat—pleasant, but it’s a bit too warming for the light body and honey.”
