What our panel thought
Aroma: "Strong alcohol up front, berries, some honey. Bourbon, light vanilla, touch of ethanol, chocolate, very light cherry, and oaky. Even better as it warms.”
Flavor: "Berries, dark fruits, sweet. Alcohol is obvious, but well integrated, adding a spicy warmth as well as drying out the finish. Tannic finish lingers. Chocolate covered cherries (with brandy centers)—chocolate, ethanol, vanilla, cherry, moderate high tannins from both fruit and oak, moderate bourbon, big sweetness. Light vegetal (likely from the chocolate) aftertaste.”
Overall: “This is a moderately boozy, barrel-aged cherry chocolate mead perfect for sharing with a group of people over dessert. Very intense, flavor, much like a fine ruby port.”
