“Blend #8 is the union of a Méthode Traditionnelle beer that was inoculated in our coolship and spontaneously fermented and aged in French oak puncheons for 3 years and a small portion of 1-year-old Missouri Saison, which was then blended, refermented on raspberries and cherries, and naturally conditioned in the bottle for several months before its release.”
What our panel thought
Aroma: “Almost candy-like raspberry is much more prominent than any tartness of either cherry or raspberry. Slight floral perfume hops aroma.”
Flavor: “Candy-like sweet and tart raspberry with very subtle tart cherry flavors. Noticeable sourness, but not super acidic. Slight neutral oak flavors. Tartness and sourness are accentuated by the carbonic bite in the finish. Finishes quite tart and dry with an almond flavor.”
Overall: “Fantastic fruit expression throughout, though some may find it a bit sweet. The tartness and sourness are pleasant, and the restrained funk makes the beer work.”
