Our second batch of our Méthode Traditionnelle (M.T. III) blend of one-, two-, and three-year-old spontaneously fermented ale.

What our panel thought

Gin-like aroma—herbal, floral—with musty lemons and grapefruits balanced by cellar funk. Enticing, bookish. Flavor brings gin botanicals, woody citrus, grapefruit—oddly sweet and bitter, muddling the acidity. Lively mouthfeel on fluffy carbonation, smooth finish. Sticky tobacco-tar bitterness.

Charred lemon aroma, fresh concrete, a bit of brioche—curious juxtaposition. Light flavor and crisp linen notes from the Brett give clear but gentle definition, while faint lemon wavers between sweet and tart. Restrained yet detailed.
