Funkwerks Saison d'Brett

What the brewers say

“Saison d’Brett is a batch of our flagship Saison aged in our 800- gallon foeder. The oak from the foeder complements the fruit and spice flavors from the saison yeast as well as the funkiness contributed by the addition of Brettanomyces yeast.”

What our panel thought

Aroma: “Lemon, Brett character, a touch of almond. Moderately spicy with a hint of mint. It smells like a liquid Newport cigarette. Rose petal and menthol, mmmm!”

Flavor: “Almost a vanilla-like sweetness up front followed by a strong Brett presence. Mint, lemon, and orange. Barnyard funk overpowers a lot of the other subtle flavors. Well-carbonated.”

Overall: “There are some different things going on in this beer, and it is a decent experience. Mouthfeel is spot-on for the style.”

Funkwerks Paisley

__Aroma:__ “A strong floral aroma comes through up front. Pineapple *Brett*-funk character adds some earthiness and slight fruitiness. Coupled with the *Brett* flavors is a strong floral, almost fancy soap-like character. Sweet, fruity, floral, mixed berries, and a hint of funk.” __Flavor:__ “A mango-like sweetness carries throughout and works with the spice notes. Pineapple and orange *Brett* funk with a huge rose-floral (geraniol) character. The finish is dry with low bitterness and moderate carbonation. Strong *Brett* funk, but tempered with some saison yeast fruity ester and malt sweetness.” __Overall:__ “I enjoyed the blend of the mango fruitiness with the spice. It had some complexity that worked, and the spice from the alcohol heat was nice. Nice pineapple and orange *Brett* funk, but the rose-floral character is really strong. Some unique and intriguing flavors that play a little against style, but add up for a nice experience.”

Cascade Brewing Kentucky Peach

Aroma: “Interesting contrast of sweet stone fruit–like peach and plum and smoky dried fruits such as raisin, prune, and fig. Floral hops with a lot of bourbon-soaked wood. Slight caramel and vanilla oak. Smoke and ashy in a good way with a lot of alcohol evident.” Flavor: “Quite acidic, sour, and tart. Peach, green apple, pear. Minimal funk. Wine-like dryness. Vanilla/caramel oak that is a bit astringent/woody. The wild flavors are fun and complex, and the dryness on the finish really enhances the fruit and builds on the peach aftertaste. Overall: “An interestingly complex and unique mash-up of styles and flavors. Overtly sour and tart, but fruity enough to notice. The wine and bourbon characteristics serve to balance the complexity of the bases.”

Jester King Saison Americaine

Aroma: “Lots of light fruity aromas, especially lemon, backed by wheat character. Berliner-like, but with more flavor and character. Funky barnyard hay.” Flavor: “Lemon tartness and wheat notes followed by moderate barnyard funk. Finishes with lots of light sweet fruit flavors. Has a hint of sour on the back end.” Overall: “Well-balanced, tart, modern American interpretation of a tart saison. Wheat character is appropriate and enjoyable. High carbonation adds to the liveliness. Very light and refreshing.”
