Yazoo Brewing Co. Saison de Bois

What the brewers say

"Saison aged in 20-year-old French oak Bordeaux red wine puncheon casks."

What our panel thought

"Spicy, funky nose, with red fruit, minty phenols, overripe mango, tangerine, lemon. Citrus-juicy sweetness up front, moderate sourness; pleasant white grape, pear. Dry, woodsy finish adds to white-wine impression. Lively."

What our editors thought

"Dry, punchy nose—faint dried pepper, dried berries, orange peel, gasoline, oak. The sip brings a tannic bite behind mellow orange citrus and white wine, with a chunky, bitter, Brett funk adding complexity."

Yazoo Brewing Brett Saison

Zesty as hell—lemon-lime, white pepper, berries, wood, dry hay. Bright, crisp flavor; beautiful balance of light fruit, hints of pine and citrus, with a light spiciness that persists through the finish. Woody Brett notes in aftertaste. Pleasingly dry, with medium tartness balancing the limited residual malt. Light and refreshing despite the complexity, this is a fantastic beer.

Yazoo Brewing Co Brett Saison

“Citrus, pineapple, with notes of hay/alfalfa at the outset. Minty and stemlike note. A bit of dried apricot. A pleasant graininess starts the sip: some Triscuit-like flavors, plus lemony wheat.”

American Solera Coolship Roadtrip

Bright orange, firm white head. Layers of pepper, lemon, lime fill the nose, underlying woody Brett, spicy hops. Layers of moldering leaves and fertile earth; like being in Mirkwood. Medium body; spicy phenols alongside aggressive but balanced barnyard. Assertive lactic sourness without a burn. Remarkably complex beer. Great balance of tart lactic acid, earthy wood, and spicy pepper phenolics.
