What our panel thought

Aroma: “Melanoidin malt notes dominate the aroma of toast and toffee. Rich, complex malt sweetness with date-like esters at the edges. Some cardboard or sherry oxidation. Earthy spice.”

Flavor: “Full, sweet malt fills the first sip. Decent malt profile, if a bit simple. Caramel, toffee, and hints of cocoa. Some cardboard and sherry aftertaste. Hops are sufficient to just balance the malt. Moderate alcohol drives the sweet finish.”

Overall: “A great after-dinner beer. The alcohol is a little hot and the flavor not quite as fresh as it could be. Alcohol persists into the aftertaste. A little past its prime, but otherwise a simple, solid interpretation of the style. Well-executed malt profile demonstrates complexity and richness.”

Spaten-Franziskaner-Bräu Optimator

**Aroma:** “Toasty, malty sweetness in the nose. Little to no hops aroma. Some mineral or sulfur character. Melanoidins, chocolate, and baked cookies. Aroma seems a bit muted.” **Flavor:** “Crisp hops flavor competes with the malt, but malt wins in the aftertaste. Smooth malt offers caramel, toast, and toffee. Hops flavors are a bit distracting but flavor is ultimately about malt. Alcohol lightens the body and is not overly hot.” **Overall:** “Well made with nice malt complexity. This is a well-crafted beer with more hops flavor than most. A little thin in the body but a great middle-of-the-road example of a doppelbock. Doesn’t take many chances but hits most of the stylistic marks.”

Jack's Abby Brewing Saxonator

**Aroma:** Big malt aroma with rich melanoidins. All about the malt: no hops, no esters, no sulfur. Nice waves of malt: cocoa, toffee, caramel, plums, and raisins. **Flavor:** Clean, rich malt with just enough hop bitterness to balance. Rich malt sweetness gives way to a pleasantly dry finish. Hops are lightly applied. A touch of carbonic burn and alcohol with some light oxidation. **Overall:** A classic doppelbock. Alcohol is well hidden behind layers of complex malt, but it all comes together in the finish. Very nice, though the hop bitterness grows with time, detracting from the overall impression. Great lager profile—tastes classically European.

**Aroma:** “The nose is all about malt with toasted grain and graham crackers right up front. There’s a caramel malt sweetness, along with some melanoidin. Some cardboard and cat piss from oxidation and a bit of herbal hops aroma.” **Flavor:** “Strongly oxidized—sherry, cardboard, and peanuts. Big rich malt centered on melanoidin and caramel with some fruit and spicy alcohol notes, but not much of the usual pepper-spice character. Sweet malt character lingers into the finish with a bit of bitterness. Needs more carbonation. The biscuit and oxidized character deliver a competing dryness that helps to balance things out somewhat.” **Overall:** “Some odd aromas and flavors. Way out of style and a beer that is most likely past its prime. On its own, this might be a hard beer to enjoy, but pair it with a nice dulce de leche or flan, and you’d have an enjoyable combination.”
